PROMiXX Pancakes

In recognition and sweet, tasty celebration of tomorrow being Shrove Tuesday (known in some countries including the UK) as ‘Pancake Day’  - We thought we would throw together some healthy protein pancake recipes for you.


Shrove Tuesday is the Tuesday before ‘Ash Wednesday’, the first day of lent and, traditionally in the UK, a day celebrated by consuming pancakes - a pretty good way to mark a significant date right?


Here in the PROMiXX kitchen, we have been experimenting and whipping up mountains of delicious protein pancakes. Check out some of our faves…


Chocolate Banana Protein Pancakes


If you’re looking for an indulgent chocolately treat, then this recipe is for you. It’s super simple and perfectly healthy - WinWin!


What you’ll need:

  • Your PROMiXX Mixer Bottle
  • 60g chocolate protein powder
  • 2 whole eggs
  • 2 tbsp gluten-free baking mix
  • 1 tbsp chia seeds
  • 1 tbsp baking powder
  • 1 completely mashed banana
  • 4 tbsp almond milk

Method:

  1. Combine all of the dry ingredients in a bowl.
  2. In your PROMiXX, combine the egg, almond milk and the mashed banana. (The banana must be mashed completely to a pulp before adding to your PROMiXX).
  3. Activate the vortex and gently pour the dry ingredients into the spinning vortex.
  4. Mix for at least 10-15 seconds.
  5. Add cooking spray to a large skillet on a medium heat. Pour ¼ cup blobs of the pancake batter onto the pan and cook until they start to bubble slightly- this should take approximately 3 minutes.
  6. Flip your pancakes, and cook for another 2-3 minutes.
  7. Finish with a topping of chopped banana and honey.

Coconut Pancakes


If chocolate isn’t the one for you then you might like to treat yourself to these beautiful coconut pancakes instead.


What you’ll need:

  • Your PROMiXX Mixer Bottle
  • 1 cup milk of unsweetened coconut milk
  • 4 whole free-range eggs
  • 1 tsp vanilla extract
  • 1⁄3 cup coconut flour
  • 1 tsp baking soda
  • Pinch of salt
  • 1 tbsp honey
  • 1 tsp coconut oil

Method:

  1. Heat coconut oil large skillet over a medium heat
  2. Crack eggs into your PROMiXX Mixer and activate the vortex.
  3. Mix until smooth and frothy, about 10-15 seconds.
  4. Add coconut milk, vanilla, and honey to the egg mixture.
  5. Add coconut flour, baking soda, and sea salt to spinning vortex and secure the lid.
  6. Pour the PROMiXX pancake mixture into the pan in coaster sized blobs.
  7. Cook  for 2-3 minutes on each side.
  8. Get creative with toppings - Serve and enjoy
